Avocado Coleslaw

2 cups coleslaw
1 avocado
2 Tbsp olive oil
2 Tbspwater
1 tsp parsley
1 tsp oregano
1 Tbsp apple cidar vinegar
Juice 1/2 lemon
I adapted this recipe from a detox I do seasonally and I really really love it. It's super fresh and healthy, packed with essential fats from avocado and vitamin-rich veggies. This serves perfectly as a main meal or as a side. Ideal for quick work lunches or for lazy days by the pool. It's pretty much an all-rounder :) Swap out the traditional, fatty coleslaw for this yummy healthy option.
Mash avocado in a bowl
Add a water, olive oil, lemon juice and apple cider vinegar in small bits to reach a smooth consistency.
Add the herbs before folding into the coleslaw
Season with salt and pepper and serve immediately
