Mixed Tomato Salad

Serves 4 as a side salad

For the salad
50g Rosa tomatoes
100g Yellow tomatoes
50g Cherry tomatoes
2 tomatoes, diced
2 spring onions or 1/4 red onion, finely sliced
20ml fresh, flat-leaf parsley, finely chopped
10 capers (optional)
2 handfuls (60g) of fresh micro-greens/green leaves of your choice
For the dressing
50ml olive oil
Juice of 1 lemon
1 clove garlic, finely chopped
Salt and black pepper to taste
This fresh, summery salad is a great accompaniment to a healthy meal. Whether it's a cottage-cheese stuffed chicken breast, a seared tuna steak, or a tasty beef fillet, this salad does the trick. What I love most is the beautiful colours of the different tomatoes, which add a subtle sweetness to the salad. Tomatoes are vibrant fruits with many health benefits. They are packed with antioxidants as well as vitamins A, C and K. Enjoy this salad on it's own or as a side and don't be shy to try it out as a guest-impressing dish.
For the salad:
Mix all the small tomatoes and split into 2 groups.
In the first batch, half the tomatoes. The second batch can stay whole. (This gives a lovely depth to the salad and makes it more visually appealing)
Place all the tomatoes, capers and spring onion/red onion in a serving dish.

For the dressing:
Combine all ingredients in a small bottle.

Drizzle dressing over salad ingredients and sprinkle with fresh parsley.
Toss and season with salt and pepper.

When ready to serve, add micro-greens and toss.
