Coconut Lentil Dhal

1 Tbsp coconut oil
1 onion, chopped
1 Tbsp chilli flakes
2 cloves garlic, chopped
1 cup red lentils
1 tsp ground coriander
1 tsp paprika
1 tin (400ml) coconut milk, reduced fat
Coconuts have recently been recognised and popularised as an extremely healthy food source of fibre, vitamins B, C and E. In this recipe, I have combined the good fat of coconut milk with the complex carbohydrate, lentils. Lentils are relatively low in calories while being a mixture of protein and carbohydrates. I'm loving the combination of creamy and spicy with this Coconut Lentil Dhal.
Heat coconut oil in a pan and add onion, garlic, onions and chilli.
Saute until onions are cooked.
Add lentils and coconut milk along with 350 ml warm water.
Reduce the heat and simmer for 30 minutes, or until lentils are cooked.
Serve warm with fresh bread or a side salad.
