
Cos Lettuce Cups

Makes a good party platter
Dinner
Gluten free
Lunch
Sugar free
Vegan
Vegetarian
4 baby marrows
1 red/yellow pepper
1 carrot
Chunk cucumber
1 can chickpeas, drained
2 Tbsp apple cider vinegar
Juice of 1 lemon
1/2 tsp cayenne pepper
Cos lettuce/cup-shaped lettuce
Optional: 1 tin tuna
Party platters that are homemade and fresh - the best! Use any leftover crunchy veggies to make these lettuce cups and decorate with toppings such as hummus or cottage cheese. This versatile dish can either be served in lettuce cups or enjoyed as a side salad.
Chop all veggies and add to a bowl.
Add chickpeas and tuna (optional).
Drizzle with apple cider vinegar and lemon juice.
Mix in spices and season with salt and pepper.
Toss well and leave to stand for as long as 12 hours.
Spoon into individual lettuce cups when ready to serve.
