Cottage Cheese-Stuffed Chicken Breast

4 chicken breast
2 ripe avocados
4 Tbsp chunky cottage cheese
4 tsp basil pesto
Juice of 1 lemon
sprinkle paprika
sprinkle ground cumin
sprinkle ground coriander
I have a sneaky feeling that this recipe is inspired by my older brother, who made a similar, yet maybe not as healthy, version of this for the family one night. It's homey, comforting, easy and it tastes amazing. Try to source free range and organic when possible to make sure you are getting the most nutritional benefits from chicken. Chicken is an especially valued source of protein, as well as vitamins A, B and D. Vitamin D assists with calcium absorption and so chicken has been associated with improved calcium levels too. Chicken is rich in the minerals selenium, phosphorus, zinc and iron. Pair these chicken breasts with salad or steamed green veggies for a healthy lunch or dinner option.
Preheat the oven to 220C
Mix spices together in a small bowl.
Butterfly chicken pieces and spread 1tsp pesto inside each one.
Now add 1 tsp cottage cheese on top of the pesto before closing and sealing shut with toothpicks.
Place chicken breasts in an oven proof dish and pour over lemon juice.
Now rub the spice mix onto the top of the chicken breast, making sure the spices stick.
Place in the oven for approx. 20 minutes, or until the chicken is cooked.
Lastly, turn the grill to full and grill the chicken for 2 minutes, or until the top has a nice colour.
While waiting for the chicken to cook, mash up the avo and set aside.
Also remember to prepare your salad or steamed green veggies for serving.
To serve, place the chicken breast on a plate and side or top with the smashed avocado and a seasoning of coarse sea salt and black pepper.
