For the Kids – Banana Bread!

Makes 1 loaf

2 Tbs coconut oil
1/2 Cup brown sugar
3 eggs
4 Tbs plain yogurt
1 apple grated, with skin on
3 bananas, smashed, not too smooth
1/2 Cup wholewheat flour
1/2 Cup plain cake flour
1/2 Cup coconut four
1/2 Cup Oats
2 tsp baking powder
1/2 tsp salt
I've teamed up with Chef Michele to bring you this delicious one for the kids, and maybe a few slices for you too! I don't have kids yet so I can't claim to know all that much about them aliens, but I am very interested in what parents feed their children. Michele shares with me: "Homemade is always the best, limited takeaways and fast food - even if its pizza or burgers, make them at home for a healthier option." I couldn't agree with her more! Thanks to Michele for sharing her kids favourite banana bread recipe with us :)
Preheat the oven to 180C
Mix the oil and sugar together using an electric mixer.
Add eggs and yogurt and beat well.
Grate the apple, mash the bananas and fold into the mix.
Sift the flours and baking powder and add oats and salt.
Add the dry ingredients to the wet ingredients and mix well with a wooden spoon.
Spoon the mixture into the bread pan and bake for 70 mins
Lastly, lick the spoons and wait for your freshly baked banana bread! YUM!
