1 cup dried goji berries
1 cup seed mix (pumpkin and sunflower works well)
Coconut oil, melted
Nom nom nom to these delicious goji berry bites. With only 3 ingredients, how can you say no to trying these out. The mixture of seeds, goji berries and coconut oil complement each other, providing you will a well-balanced snack. Goji berries are an ancient superfood that is high in vitamin A, C, iron and fibre, and low in calories. The seeds contribute a protein, therefore assisting in stabilising blood sugar levels. Coconut oil is a well-known source of healthy fats with too many health benefits to list. The unique flavour makes these rich balls an ideal snack for anytime of the day.
Place goji berries and seeds in a food processor or blender and pulse.
The mixture might stick together so use a spoon to stir and make sure all ingredients are well combined.
Add 2 Tbsp coconut oil and use your hands to mix into the dry ingredients.
Slowly add more coconut oil, Tbsp by Tbsp, being careful not to add too much.
When the mixture is only just wet enough to stick together, roll into balls and refrigerate for 2 hours, or until set.
