Goji Chocolate Brownies

1/2 cup cacao powder
1/2 cup glutenfree flour or flour of choice
1 tsp baking powder
1/4 cup almond flour
Pinch of rock salt
2 Tbsp chia seeds, pre-soaked
2 eggs, slightly beaten
4 Tbsp honey/date paste/coconut nectar
1/3 cup mixed nuts of choice
1/3 cup goji berries
1/3 cup dark chocolate chips
Nothing better than a chocolaty treat! Load your brownies with superfoods by adding goji berries, raw cacao powder and chia seeds. Goji berries are an excellent source of antioxidants. Cacao powder goes the extra mile with its super antioxidant properties and its nutrient-dense mineral content. Chia seeds are trending as a plant-source of omega 3 fatty acids, great for anti-inflammatory purposes. Combine these wonders into a yummy guilt-free chocolate brownie.
Preheat the oven to 180C
Sift all dry ingredients/flours into a mixing bowl
Add the honey, chia seeds and rock salt and stir to combine.
Fold in the eggs before adding the nuts, goji berries and dark chocolate chips.
Line or grease a baking dish to prevent sticking. I actually used a bread dish as it was the perfect size.
Spoon mixture into the dish, using a spatula to make sure none is left behind
Bake for 15 minutes, for a cake-like brownie.
Dust with grated dark chocolate and sprinkle with extra goji berries to serve.
Enjoy warm
