Homemade Basil Pesto

2H basil leaves
20 raw cashews
1 tsp apple cider vinegar
Salt and pepper
1/2 tsp mixed dried herbs
1 tsp honey or coconut nectar
Juice of 1/2 small lemon
Olive oil or flaxseed oil to reach consistency
1/2 round feta
Homemade pesto is surprisingly easy to make, yet we generally buy it from the shops, so convenient! The thing is, the one from the shops is not fresh and often consists of lots of canola oil. I make mine with olive oil or flaxseed oil, both really healthy sources of fat. Plus, now you can say bye bye to all the preservatives you find in long life products - hello fresh! Stir into pasta, dollop onto salad or use as a dip with your fresh veggies.
Blend all ingredients together, adding the oil until you have reached a desired consistency.
