Lemon Bliss Balls

2 cups almond flour
juice of one small lemon
2 Tbsp honey or coconut nectar
dash of vanilla essence
1/4 cup melted coconut oil
Desiccated coconut for dusting
This is the kind of recipe you can play with. With so few ingredients, try adding your own spark. You can have them raw and gooey, or cooked and crispy. You can enjoy them as biscuits or as round bliss balls. I have tried all variants and I think I have a favourite...but i'll leave you to find your own! I use coconut nectar to sweeten my treats, as it has a lower GI than sugar and naturally contains vitamins, minerals, amino acids and other nutrients. However, you can also use honey if you can't get your hands on coconut nectar. These lemony treats are the perfect tea time snack for mid-morning or late afternoon, paired with a cup of tea or a fresh juice.
Combine all ingredients in a mixing bowl
Roll into balls and roll in desiccated coconut
Option 1:
Flatten with a fork and bake in the oven at 180C for 20 minutes or until browned
Option 1:
Pop the balls in the oven and bake at 180C for 20 minutes, turning half way through
Option 3:
Place balls or biscuits into the fridge and leave overnight for a raw version
