Peanut Butter Muffins

1 egg
1/2 cup milk (I use Almond Breeze Unsweetened Almond Milk)
1/3 cup coconut flour
1/3 cup gluten free flour
1/4 tsp bicarbonate of soda
1 tsp baking powder
2 heaped Tbsp honey
3 heaped Tbsp peanut butter
1/2 tsp course sea salt
1/4 cup dark chocolate chips
You think you like peanut butter? I'm sure I can beat you on that one. Peanut butter is a great source of plant protein and potassium and is a valued source of fibre, healthy fats and magnesium. Try out these fluffy, gluten free peanut butter muffins with chocolate chips - a real crowd-pleaser!
Preheat oven to 180C
Place muffin holders in a muffin pan, or oil the muffin pan to prevent sticking.
Beat egg lightly before adding milk and combining.
Sift in the flours and stir with a wooden spatula.
Add honey and peanut putter and mix until combined.
Sprinkle in salt and fold in the chocolate chips (optional)
Bake for 20 minutes
Remove to cool before serving
