Quinoa & Zucchini Rounds

Makes 5 - 6 rounds, depending on size

1/2 cup quinoa
1/2 round feta
2 eggs
2 cups grated zucchini
1 Tbsp herbs of choice (Oreganum, Basil, Mixed)
Salt and pepper to season
Toppings of choice
I must be honest, I made this completely by accident! I had some left over grated zucchini and was like...hmmm...what to do? So I threw a couple of fridge ingredients together and tadaaa - these awesome Quinoa and Zucchini Rounds were born. I love to pair these with seasonal avocado, homemade hummus and sprouts or micro greens. I've also topped one with chicken strips before - very versatile and very yum! Add these as a healthy carb option to your lunches or dinners and enjoy :)
Boil quinoa until cooked
Grate Zucchini and squeeze out all liquid using a dish cloth or muslin cloth
Mix together and add herbs, salt and pepper
Lightly whisk eggs and fold into the mixture
Optional: fold in crumbled feta
Heat coconut oil in a small frying pan
Add mixture to the pan (either taking up the whole pan if you have a small one), or making your own shapes
Leave for at least 2 minutes before flipping
(If you flip too early, it will break so try to leave for as long as possible)
Once cooked on both sides, plate and top with avocado, homemade hummus, chicken strips, micro greens or sprouts and enjoy!
