Red Lentils & Spicy Veggies

1tsp coconut oil
1 - 2 Tbsp Thai 7 Spice (I use Cape Herb & Spice)
1 onion, sliced into thin strips
1 clove garlic, chopped
15 small baby marrows, sliced lengthways
2 red/yellow pepper, sliced into strips
Red Lentils
Ideal for those quick whip-me-up dinners that require minimal effort and minimal time. Hits the right spot for any lover of spicy foods. Warning: This is not for the feint hearted! Lentils are part of the legume family and are an incredibly good source of dietary fibre. Lentils are significantly high in folate and magnesium, both important for energy and other important bodily processes. Mixing these wonder legumes with colourful veggies ensures you are getting in your antioxidant kick. Keep it spicy this winter with this delicious Thai-styled dish.
Heat the coconut oil in a pan and add onions and Thai 7 Spice
Fry for 1 - 2 minutes before adding in the garlic, baby marrows and peppers.
Fry until cooked to your preference.
In a separate pot, boil red lentils for 15 - 20 minutes or until cooked.
Combine lentils with veggies and serve
(no need to season with salt and pepper - the spice mix does it all)
