Rice Carbonara (cream-free!)

4 chicken breasts, cubed
1 cup brown rice, par-boiled
1 onion, finely chopped
1 red pepper, finely chopped
1 punnet mushrooms, sliced
400ml coconut milk
I'm focusing on healthy versions of family favourites at the moment, and a carbonara had to make the list. In all honesty, i'm not a fan of cream - it's just too rich for me,so I wanted to make a cream-free carbonara that is both healthy, and tastes amazing! I defaulted to the good old coconut milk - and of course - it worked wonders! Coconut milk has taken the health world by storm, and no question as to why - coconuts are highly nutritious and a valued source of fiber. Strangely enough, coconut milk is also a source of calcium, so great for vegans and people who are lactose intolerant. Warm up with this creamy, cream-free carbonara this winter!

Option: Take out the chicken to make this dish suitable for vegans/vegetarians
Chop all veggies and fry until just about cooked.
Brown chicken in spices or herbs of your choice.
Add all ingredients to a small baking dish or portion-size ramekin.
Bake at 180C for 45 minutes or until the rice is cooked.
Serve immediately for a delicious, winter-warming meal
