Roast Chicken with Veggies

1 whole organic, free range chicken
1/4 cup olive oil or coconut oil
1 onion, sliced
1 clove garlic
Optional: few sprigs of rosemary
3 - 4 Tbsp cajun chicken spices
We all love a Sunday Roast and now that it's winter, it's time to indulge in these family favourites. I have recently become addicted to this easy roast chicken recipe since it takes minimal effort and tastes super yum! This is perfect for a family or friends get together. I would recommend trying the Farmer Angus brand, found at selected Wellness Warehouse stores - always going for the Framer Angus brand. Pair this roasted chicken with some seasonal roasted veggies and a glass of your wine of choice!
Preheat the oven to 200C
Stuff the inside of the chicken with onion and garlic (and optional rosemary).
Coat the outside of the chicken with oil and cajun spices.
Place the whole chicken breast-down on a baking dish and pop in the oven for 40 minutes.
Turn over and bake for a further 20 minutes.
Grill for the final 5 minutes to get a crispy top.

Serve with roasted veggies and a side salad.
