Salted Peanut Butter Biscuits

1 egg
1/2 cup xylitol
1 cup crunchy, sugar-free peanut butter
1 tsp vanilla essence
1/4 tsp rock salt
1/4 cup coconut flour
1 tsp baking powder
1/2 cup chopped raw nuts
Rock salt for sprinkling (optional)
My future mom-in-law is pretty cool, like every time I visit there is a new gluten-free goodie for me! I have a slight peanut butter craving...and by slight I mean quite enormous! These gluten-free peanut butter biscuits save my cravings and also make a really cute afternoon tea snack. Make sure you use a natural, sugar-free peanut butter. Health shops usually have many options of these! I hope you enjoy :)
Preheat oven to 170C
Mix the eggs, xylitol, peanut butter, vanilla and salt until combined.
Now sift in the flours and baking powder and combine until a dough is formed.
Fold in the nuts and then roll into balls.
Flatten with a fork and sprinkle with sea salt as desired.
Bake for 8 - 10 minutes or until browned and cooked through.
