Soaked Oaty Breakfast

1/3 cup whole rolled oats
2 Tbsp goji berries
1 Tbsp chia seeds
Dash cinnamon
2 Tbsp coconut flakes
Optional: 1 tsp honey
This has been my new winter staple breakfast. Oats are a great source of dietary fibre, specifically beta-glucan. This type of fibre is known to help lower LDL cholesterol, contributing to heart health. Plus, Soaked Oats are easy to make and are warm and comforting to keep your tummy full in the cold wintery months.
Add oats, chia seeds, goji berries and cinnamon to a small, deep dish.
Add boiling water, enough to cover the oats.
You will need to add more or less water, depending on your desired consistency.
Cover the dish and leave to stand for 10 minutes.
In the meantime, toast coconut flakes on a pan.
Add these to the oats, mix and enjoy.
