Strawberry Salad

Serves 4 as a side salad

3 handfuls of mixed lettuce leaves
10 - 15 strawberries depending on size, washed and sliced
8 tsp chunky cottage cheese
2 tsp basil pesto
4 Tbsp pumpkin seeds
1/3 cup of sprouts of your choice, for decorating
4 Tbsp extra virgin olive oil
1/2 lemon, freshly squeezed
Salt and Pepper for seasoning
Summer marks the start of fresh and colourful salads. I'm not such a fan of the normal garden salad, but do love a creative, colourful, crunchy salad like this one. Strawberries are in season and as well as being delicious, are an excellent source of folate, vitamin C and many other antioxidants. Brighten up your day with this fresh strawberry salad.
Toss mixed lettuce leaves in a bowl with olive oil and freshly squeezed lemon juice.
Top with sliced strawberries and dollops of cottage cheese.
Add a pea-sized portion of basil pesto on top of each cottage cheese round.
Sprinkle pumpkin seeds and sprouts over the salad and season with salt and pepper.
Enjoy fresh!
