Tuna Bake

1 onion
1 clove of garlic
1 red pepper
1 yellow pepper
1/3 cup frozen peas
3 Tbsp flour (I use gluten free)
1 cup milk (I use almond milk)
1 tin tuna
1 tsp dill
1 tsp mixed herbs
Cornflakes to crumble over the top
Historically, bakes were unhealthy with lots of cream and unhealthy fats, but here is a simple and easy tuna bake that will warm you up from the inside, while being healthy and yummy too! This is an easy-to-make family meal that is suitable for a simple weekday dinner. It goes nicely with a baked sweet potato or a side salad, or can be eaten on its own.
Preheat oven to 180
Thinly chop the onion, garlic and peppers and fry in coconut oil.
Mix flour and milk together over a low heat until it thickens slightly.
Stir the milk mixture into veggies and continue to cook on a low heat.
Cook over low heat until sauce is thick and smooth.
Add tuna, herbs and peas.
Season with salt and pepper and tip into baking dish.
Top with crushed cornflakes.
Bake for 30 minutes and enjoy with a side salad or a baked potato.
